Spicy Vegan chicken sandwich

 

 

Seitan Ingredients:

1 1/2 Cups Vital Wheat Gluten https://amzn.to/34c1flR

3 Tbsp Nutritional Yeast https://amzn.to/2LjZKtt

1 tsp poultry seasoning (or any chicken seasoning you prefer)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp Himalayan salt

1/2 tsp pepper

1 tsp Cumin

1 tsp thyme

2 tsp Red pepper

1 tsp Cayenne pepper

3 Bay leaves

1 tsp black pepper

1 tsp Oregano

1 tsp turmeric

2 Tbsp Nutritional yeast

1 tsp Fennel powder

1 tsp Curry powder

1 Veg bouillon

2 Tbsp Olive oil

3/4 cup water

  1. Mix the seasonings and the water
  2. Add the 1 1/2 Cups Vital Wheat Gluten https://amzn.to/34c1flR
  3. Stir the ingredients together and make sure everything is well combined.

Seitan Boiling Broth Ingredients:

1 tsp poultry seasoning (or any chicken seasoning you prefer)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp Himalayan salt

1/2 tsp pepper

1 tsp Cumin

1 tsp thyme

2 tsp Red pepper

1 tsp Cayenne pepper

3 Bay leaves

1 tsp black pepper

1 tsp Oregano

1 tsp turmeric

2 Tbsp Nutritional yeast

1 tsp Fennel powder

1 tsp Curry powder

1 Veg bouillon

2 Tbsp Olive oil

3/4 cup water

  1. Boil this for 5 mins to make the broth, set aside and let cool or buy vegetable broth 
  2. Chop the seitan into 1-2 inch chunks
  3. Boil the Seitan for 5-10 mins, and let cool 
  4. In a small bowl mix together the ingredients for the wet mixture and set aside
  5. In another bowl of medium size, begin mixing together the breading ingredients and set aside
  6. Begin by dipping the chicken in the wet mixture, then in the dry mixture/breading, BACK in the wet mixture, then in the breading again.
  7. If you are frying on the stove, you will need about 4-6 inches of oil.
  8. On medium heat, place the seitan in the oil (I used grapeseed oil) and fry them.
  9. In batches, place burgers in hot oil. Fry for about 5-8 minutes, flipping occasionally, or until the outside is crisp and golden brown. Using tongs, remove burgers from oil and place on a plate lined with paper towel.
  10. Heat a large, dry skillet over low heat. Toast the Ezekiel bread slices for about 1-2 minutes.

  12. Remove slices from the pan. Place vegan Cashew creamy sauce on bottom half of each slice and top with fried chicken, spinach, tomatoes. Serve immediately with your favorite hot sauce, white, and black sesame seeds if desired.
