Spicy Jackfruit Fried Chicken Salad 🥗 

 

Dressing:

1/3 cup Chickpeas

1/4 Raw cashews

1 tsp Lime juice

1 tsp Avocado oil

1/2 cup Water

Add to a food processor and mix until smooth

 

Dry mixture:

1 1/2 cup flour

1 tsp sea salt

1 tsp cayenne

1/2 tsp pepper

1/2 tsp onion powder

1/2 tsp paprika

1 tsp garlic powder

1/4 tsp oregano

1/4 tsp chipotle chili powder

 

Wet mixture:

1 tsp poultry seasoning

1 tsp garlic powder

1 tsp onion powder

1/2 tsp Himalayan salt

1/2 tsp pepper

1 tsp Cumin

1 tsp thyme

2 tsp Red pepper

1 tsp Cayenne pepper

3 Bay leaves

1 tsp black pepper

1 tsp Oregano

1 tsp turmeric

2 Tbsp Nutritional yeast

1 tsp Fennel powder

1 tsp Curry powder

1 Veg bouillon

2 Tbsp Olive oil

1 cup water

INSTRUCTIONS

I used @thejackfruitco BBQ Jackfruit

  1. In a small bowl mix together the ingredients for the wet mixture and set aside
  2. In another bowl of medium size, begin mixing together the breading ingredients and set aside
  3. Add enough oil to a frying pan and turn on to medium-low heat

To the Jackfruit:

  1. Add 2 Tbsp Crushed red pepper
  2. 1 Tbsp Nutritional Yeast flakes
  3. 2 Tbsp Homemade Seasoning based
  4. Add 1 Tbsp of vital wheat gluten ( acts as a binder)
  5. Shape the jackfruit using  wooden skewers as “bones”
  6. Use Edible rice water ( "Chicken skin")-Lay the rice paper down
  7. Add jackfruit
  8. Add the wooden skewer
  9. Add more jackfruit
  10. Wrap them

  1. Begin by dipping the jackfruit in the wet mixture, then in the dry mixture/breading, BACK in the wet mixture, then in the breading again.

   2. Once completed, add it to the hot frying pan. Note: you can add them one at a time, or wait until you've completed a handful of pieces to fry together.

 3. If the oil (I used grapeseed oil) in the pan does not fully cover the jackfruit pieces, keep an eye on them so that they can be rotated after 2-3 minutes. You will know if they're ready when you touch them with your tongs and the breading has hardened and is crispy

4. Repeat until all jackfruit is fried

5. Once the jackfruit is fried, transfer to a plate with 3-4 layers of paper towels so that some of the oil can be absorbed. Allow them to cool for ~4 minutes before serving

6. Pair with your favorite dipping sauce (or not) and enjoy!
